It started with Indrani.
She can't eat 18 ingredients — including gluten, dairy, eggs, soy, nuts, sesame, corn and fish. In South Africa, that rules out almost all Asian food. For 5 years, she cooked everything herself — and went without dumplings, her favourite. She called us. 3 days later, we made her a batch: gluten-free wrappers, no fish sauce, the same generous Thai chicken filling.

What's inside

• Chicken thigh only — never dry breast — hand-sliced and hand-minced
• Vegetables salted for a full day, then squeezed dry, so every bite stays crunchy
• Coriander, homemade Thai green curry paste and ginger. Mild enough for kids
• Recipe reworked 8 times, so it's just as delicious without the problem ingredients
• Thin, hand-folded gluten-free skin. Freezer to plate in 10 minutes

Why 5 packs?
We make gluten-free separately: first thing in the morning, before anything else, on fully cleaned equipment. 5 packs is half a batch — our minimum.
