    For silky Asian desserts (mochi!) and thickening 

    Pure sticky rice, milled fine. Creates silky, chewy texture in mochi, rice cakes, dumplings. Improves crispiness in fried foods, stabilizes frozen textures, thickens sauces.
    Glutinous rice flour is rarely used alone in modern food production. Usually combined with potato starch, tapioca starch, corn starch and / or wheat flour.

    How to Use This

    - Dumpling wrappers for extra chewiness (5-15% of dough)
    - Fried chicken batter for longer crispiness (5-10% of batter)
    - Mochi desserts for main structur (70-100% of dough)
    - Frozen foods for texture stability (2-5% of total weight)
    - Asian pastries for soft chewy bite (10-30% of pastry)
    - Sauces & curries as natural thickener (1-3% slurry)

    Note: Glutinous ≠ gluten. "Glutinous" means sticky texture, not wheat gluten. Not a replacement for rice flour (which makes crispy, crunchy texture).
