We take konbu (or kombu — the nutrient-dense seaweed behind Japan’s legendary longevity — and cure it raw (not simmered) in our house-made Umami Soy Sauce. This keeps all the minerals and antioxidants intact, while adding deep, satisfying flavour.

    Use as a topping for:
